The Adjust Mode doesn't do what you think it does. I asked Brooks the same question when I first started, and here's his response:
You can adjust the position of the servo arm by removing the screw that holds it to the shaft, then lift the arm off of the shaft, rotate it to where you want it, and press it back on the shaft. The shaft and arm have splines (grooves) that keep them locked together, and they must be pulled apart in order to place the arm in a different position in relation to the servo motor.
The Adjust mode allows you to reposition the servo horns [as stated above]. There isn't anything you can do electronically without adding an additional circuit like the ServoCity Servo-Stretcher, which allows you to tweak the end points.
